The Holiday turkey roll with savoury duck and maple sausage stuffing yields a satisfying, juicy white turkey breast meat, all encased in crisp, golden brown turkey skin. This all Ontario Local product is easy to prepare, boneless and will surely be a great new addition to all of your future family and holiday gatherings.

Cooking Instructions: (click here for PDF)

  • Preheat oven to 204 °C (400 °F)
  • Remove turkey from its packaging being sure to leave the netting on the turkey while roasting
  • Drizzle 2 table spoons olive oil
  • Season outside of turkey with kosher salt and pepper
  • Place on roasting rack over a large pan
  • Roast at 204 °C (400 °F) for 20 min then reduce heat to 177 °C (350 °F) until an instant read thermometer registers 66 °C (150 °F), 1 to 1.5 hours
  • Remove from oven
  • Brush with maple syrup
  • Return to oven, and roast until an instant read thermometer registers 71 °C to 74 °C (160 °F to 165 °F), about 20 minutes more
  • Remove from oven, and let rest for at least 10 minutes
  • Transfer to a cutting board
  • Remove netting, and cut crosswise into 1.27 cm ( ½ in.) thick slices
  • Place slices on a platter, and garnish with watercress
  • Serve with cranberry compote
