Merguez is a sausage made with lamb meat, in a collagen casing. It is spiced with cumin and chili pepper (which gives it its characteristic piquancy and red color) as well as other spices such as sumac, fennel, and garlic. This sausage is made from 100% Lamb in a collagen casing. This product is shipped frozen, vacuum sealed.
Wine Pairing: Pinot noir or Cabernet Franc
Cooking Tips: Heat a griddle pan until smoking hot. Cook the merguez sausages on the hot griddle for 2-3 minutes on all sides, turning regularly, until the sausages are cooked through. Squeeze a little lemon juice over them.
